Ingredients:

  • Nonstick cooking spray
  • 2 cups plain low-fat yogurt
  • 3 tbsp. whole wheat flour
  • 1 tbsp. curry powder
  • 2 hard-boiled eggs and 4 egg whites
  • ¼ cup green onions, sliced
  • ¼ tsp. salt
  • 1 tsp. pepper
  • 1 pkg. (10 oz.) frozen spinach, thawed and drained

Directions:

  1. Spray a medium saucepan with nonstick cooking spray and set over medium heat.
  2. In a medium-sized bowl, blend together yogurt, flour, and curry powder.
  3. Chop up eggs and combine with egg whites.
  4. Stir eggs, onions, salt, and pepper into yogurt mixture.
  5. Cook egg mixture over medium-low heat, stirring constantly until mixture is just bubbling.
  6. Cook spinach, then arrange in ramekins.
  7. Spoon hot egg mixture over spinach.
