Ingredients:

Crust

  • 1 small head cauliflower, cut into small florets
  • 1 egg, lightly beaten
  • ½ cup shredded mozzarella cheese
  • 1 tsp. garlic powder
  • 1 tsp.dried ground oregano
  • ¼ tsp.ground black pepper
  • ½ tsp.olive oil

Toppings

  • ½ cup shredded mozzarella cheese
  • ½ cup spinach
  • ½ cup grape tomatoes, halved

Directions:

  1. Preheat oven to 450°F.
  2. In a food processor, “rice” the cauliflower florets, so they are evenly chopped into small chunks that look like grain. Do not pulverize it. This should yield about 1 cup of cauliflower rice.
  3. Place the cauliflower rice in a microwave-safe bowl and microwave for 8 minutes.
  4. To get rid of the moisture so you don’t end up with mushy dough, place the cauliflower rice in a tea towel and twist it.
  5. In a medium bowl, mix together the cauliflower, egg, mozzarella, garlic powder, oregano and black pepper.
  6. Transfer the cauliflower mixture to a baking sheet lined with parchment paper and greased with olive oil. Use your hands to press and pat out the mixture to form a thin, round crust.
  7. Bake on middle rack for 15 minutes, until golden.
  8. Remove from oven and let cool for 5 minutes.
  9. Add your toppings and return to the oven for another 10 minutes, or place under a broiler until cheese is melted.
  10. Let cool and enjoy!
