Ingredients:

  • 4 boneless, skinless chicken breasts (approx. 4 oz. each)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. Italian seasoning
  • 1/2 tbsp. olive oil
  • 2 large tomatoes, sliced into 8 pieces
  • 4 oz. fresh mozzarella, sliced into 4 pieces
  • 1/4 cup balsamic vinegar
  • 6 fresh basil leaves
  • Salt & pepper to taste

Directions:

  1. Preheat oven to 400°F.
  2. Place chicken in a large bowl and sprinkle with salt, pepper and Italian seasoning.
  3. Add olive oil and toss until chicken is evenly coated.
  4. Lay chicken on a sheet pan or a baking dish. Top each breast with one slice of mozzarella and two slices of tomato. Add salt and pepper to taste.
  5. Bake for 25 to 30 minutes.
  6. Drizzle with balsamic vinegar and top with basil leaves.
