Ingredients:
- 2 eggplants
- 3 tbsp. lemon juice
- 1 tsp. salt
- ½ tsp. pepper
- 1 garlic clove, minced
- 3 tbsp. tahini
- 1 tbsp. olive oil
- 2 tbsp. pine nuts
- 1 tbsp. parsley
Directions:
- Preheat oven to 375°F.
- Bake eggplants whole on a baking sheet, about 45 minutes.
- Cut eggplants in half and scoop out flesh.
- Place eggplants, lemon juice, salt, pepper, garlic, tahini, and pine nuts in a food processor, and blend until smooth.
- Transfer to medium bowl. Slowly stir in olive oil and parsley.
- Serve with pita bread.
